So it’s Halloween and though it seems to revolve around over-consumption of unhealthy ingredients like sugar… it doesn’t have to!  When I was a kid one of my favorite concoctions was the No Bake cookie.  They were easy for mom to put together, had oats, chocolate and my favorite… peanut butter.  Sometimes during these holidays, it gets me thinking about things that I enjoyed as a kid.   I loved Halloween like most kids because it was perfectly okay to overindulge in a sugary treat.  I may have been allowed, but it certainly wasn’t the healthiest way to be.

Now that I am an adult, I certainly don’t want to eliminate the things that I loved as a child. Let’s face it they carry with them some pretty amazing memories.  However, as an adult, I know what is good for me and what is not, so I find ways to enjoy the holidays in a way that serves my health and nutritional lifestyle.

This Halloween I decided to find a delicious and healthy alternative to those childhood favorites so that I say yes to a healthy Halloween.  I found exactly what I was looking for… a fat bomb that is healthy, delicious and easy to make called No Bake Chocolate Peanut Butter Fat Bombs!  Grab a few ingredients from your pantry and your off to enjoy some of these delicious treats!

These treats, just like the no bake cookies from my childhood are no Bake.  That makes them so easy to make…  In fact, they are so easy you will want to put together a big batch and freeze so that you have some available anytime your sweet tooth needs to be tamed.  When making these, instead of using regular peanut butter you can actually use powder.  Ruled.me says they use the powder for its absorptive properties, however, I also find it less messy!

It’s a delicious and balanced treat that has some sweet, some savory and a little nutty flavor that makes this an all-around winner in my book.  If you are anything like me you enjoy food with texture.  You get it all when you bite into one, they are chewy with a little crunch especially if you toast those coconut flakes (optional of course).

The Lowdown

Yields 8 servings at 208 Cal per serving, 20g Fat, .08g Net Carbs, and  4.4g Protein.

The Execution

  1. Mix together all of the dry ingredients with the coconut oil. It may take a bit of work, but it will eventually turn into a paste.
  2. Add heavy cream, vanilla, and liquid stevia. Mix again until everything is combined and slightly creamy.
  3. Measure out unsweetened shredded coconut on to a plate.
  4. Roll balls out using your hand and then roll in the unsweetened shredded coconut. Lay on to a baking tray covered in parchment paper. Set in the freezer for about 20 minutes.

Easiest one yet, right?
