It’s #WhatsCookinWednesday and what could be better than this  #WhatscookinWednesday Low Carb Keto Chicken Bacon Ranch Casserole?  In my book… nothing!  So what makes this recipe so great?  Simply put, did you read the part where I say that it has bacon.  Bacon!  Just work word gets me ready for this one.

But really, there are a lot of other great things you’ll love about the recipe.  Second (Bacon is first)  it’s perfect for that leftover chicken that you have stored in the fridge.  In addition, it’s low carb, gluten-free and grain free.  Oh, I forgot the part where it’s easy to prepare and a party for the tastebuds… because you know… bacon!

Get out the leftover chicken and gather up the groceries that you will need to make this one and you will have dinner and leftovers for tomorrow lunch!  Oh, did I just hit upon another reason why this recipe is so amazing?  Oh yes, I did!

Let’s get started!

The Lowdown

Serves 8. Each bagel comes out to be 498 Calories, 36g Fat,  4g Net Carbs, and 37g Protein.

The Groceries

  • 1.5 LB cooked chicken, cubed
  • 1 LB fresh broccoli, steamed and drained or frozen broccoli, thawed and drained
  • 1 TBSP minced onion
  • 1 TBSP parsley
  • 1/2 TBSP garlic powder
  • 1/2 TBSP dill
  • 1/2 TSP salt
  • 1/2 TSP pepper
  • 1/4 CUP + 2 TBSP bacon crumbles (I use real bacon)
  • 8 OZ cream cheese softened
  • 4 OZ sour cream
  • 4 OZ mayo
  • 8 OZ shredded cheddar

The Execution

  1. Preheat oven to 350 degrees.

  2. In a big bowl combine the cream cheese, sour cream, mayo, and spices and mix thoroughly.

  3. To the cream cheese mixture, you just made add the chicken, broccoli, 3/4 of the cheese, and the 1/4 cup bacon crumbles and mix well.

  4. Dump into a 9×13 baking dish sprayed with cooking spray. Sprinkle remaining cheese and 2 tbsp bacon crumbles on top.

  5. Bake until hot about 35 minutes.
